📝 Ingredients:

For the Enchiladas:

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • Salt and pepper, to taste

  • 8 small flour or corn tortillas

  • 1½ cups shredded cheddar or Mexican blend cheese

  • 1 (10 oz) can enchilada sauce

  • Fresh diced tomatoes & cilantro, for garnish

Optional Sides:

  • Refried beans

  • Steamed white or Mexican rice

  • Salsa or guacamole


👩‍🍳 Instructions:

  1. Cook the Beef:

    • In a skillet over medium heat, cook ground beef with chopped onion and garlic until browned.

    • Add cumin, chili powder, salt, and pepper. Mix well and simmer for 5 minutes. Remove from heat.

  2. Prepare the Tortillas:

    • Preheat oven to 375°F (190°C).

    • Warm tortillas slightly to make them pliable.

    • Spoon beef mixture into each tortilla, sprinkle with a little cheese, and roll them up.
