For the Enchiladas:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

8 small flour or corn tortillas

1½ cups shredded cheddar or Mexican blend cheese

1 (10 oz) can enchilada sauce

Fresh diced tomatoes & cilantro, for garnish

Steamed white or Mexican rice

Cook the Beef:

In a skillet over medium heat, cook ground beef with chopped onion and garlic until browned.

Add cumin, chili powder, salt, and pepper. Mix well and simmer for 5 minutes. Remove from heat.

Prepare the Tortillas:

Preheat oven to 375°F (190°C).

Warm tortillas slightly to make them pliable.

Spoon beef mixture into each tortilla, sprinkle with a little cheese, and roll them up.
