Cheesy Garlic Zucchini Steaks – Crispy, Flavorful & Low-Carb Delight! 🥒🔥

Ingredients:

  • 2 medium zucchinis
  • 2 tablespoons olive oil (or melted butter)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven or Grill:
    • Preheat your oven to 400°F (200°C) if baking. Alternatively, you can use a grill if you prefer a smoky flavor.
  2. Prepare the Zucchini:
    • Slice the zucchinis lengthwise into 1/2-inch thick “steaks.” You can cut the zucchini in half first, and then slice each half into planks.
    • Lay the zucchini slices on a cutting board or tray and pat them dry with a paper towel to remove any excess moisture.
  3. Season the Zucchini:
    • Brush both sides of the zucchini steaks with olive oil or melted butter.
    • Sprinkle minced garlic, oregano (if using), salt, and pepper over the zucchini slices. Make sure each piece is evenly coated.
