Ingredients:
- 2 medium zucchinis
- 2 tablespoons olive oil (or melted butter)
- 4 cloves garlic, minced
- 1 teaspoon dried oregano (optional)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven or Grill:
- Preheat your oven to 400°F (200°C) if baking. Alternatively, you can use a grill if you prefer a smoky flavor.
- Prepare the Zucchini:
- Slice the zucchinis lengthwise into 1/2-inch thick “steaks.” You can cut the zucchini in half first, and then slice each half into planks.
- Lay the zucchini slices on a cutting board or tray and pat them dry with a paper towel to remove any excess moisture.
- Season the Zucchini:
- Brush both sides of the zucchini steaks with olive oil or melted butter.
- Sprinkle minced garlic, oregano (if using), salt, and pepper over the zucchini slices. Make sure each piece is evenly coated.
