🍽️ Ingredients (Serves 4)

🥩 For the Schnitzel:

  • 4 veal escalopes (approx. 600 g)

  • 2 eggs

  • 50 g plain flour

  • 150 g breadcrumbs

  • 1 tbsp milk

  • 1 lemon (for garnish)

  • 200 g lard (or oil for frying)

  • A little oil (for egg mix)

  • Salt

🍠 Suggested Sides:

  • Creamed carrots (buttered & seasoned)

  • Creamy mashed potatoes


👨‍🍳 Preparation

Step 1: Prep the Veal

  1. Slice the veal cutlets if needed (not too thin).

  2. Lightly score the edges to prevent curling.

  3. Place the cutlets between two sheets of cling film and gently pound until about 6 mm thick.

  4. Salt both sides and set aside.


Step 2: Bread the Schnitzels

  1. Set up a breading station with three plates:

    • Plate 1: Plain flour

    • Plate 2: Whisked eggs with 1 tbsp milk and a small splash of oil

    • Plate 3: Breadcrumbs

  2. Dredge each schnitzel in flour (shake off excess), dip into the egg mixture, and coat in breadcrumbs.
