Crispy Pan-Fried Dumplings (Potstickers) 🥟

Instructions:

  1. Mix the Filling: Combine pork (or chicken), cabbage, green onions, garlic, ginger, soy sauce, sesame oil, and white pepper in a bowl.

  2. Assemble the Dumplings:

    • Place a wrapper in your palm.

    • Add 1 tsp filling in the center.

    • Moisten the edges with water and fold in half to seal, pressing out the air.

    • Crimp the edges if desired.

  3. Pan-Fry & Steam:

    • Heat oil in a non-stick skillet over medium heat.

    • Add dumplings in a single layer and fry until bottoms are golden brown (2–3 mins).

    • Add 1/4 cup water to the pan, cover, and steam for 5–6 minutes until water evaporates.

  4. Uncover & Crisp:

    • Remove the lid and let the dumplings crisp up for another minute.

Serve With:

A simple dipping sauce:

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • Optional: chopped chili or garlic
