Ingredients:
- 500 g all-purpose flour (plus extra for dusting)
- 50 g sugar
- 250 ml warm milk
- 7 g active dry yeast (or 25 g fresh yeast)
- 3 egg yolks
- 1 whole egg
- 60 g butter (melted)
- 1 tsp vanilla extract
- A pinch of salt
- Zest of 1 lemon (optional)
- Filling: jam (rosehip, raspberry, plum — your choice!)
- Powdered sugar (for dusting)
- Oil for deep frying
Instructions:
1. Activate the yeast: In a bowl, mix warm milk, yeast, 1 tsp sugar, and 1 tbsp flour. Let it sit for 10-15 minutes until foamy.
2. Make the dough: In a large bowl, combine flour, sugar, salt, lemon zest, egg yolks, whole egg, and vanilla. Add the yeast mixture and start mixing. Then add melted butter and knead until smooth and elastic (about 10 minutes).
3. Let it rise: Cover the dough with a cloth and let it rise in a warm place for 1–1.5 hours until it doubles in size.
4. Shape the doughnuts: Roll out the dough to about 1.5 cm thick. Cut into rounds with a glass or cutter. Place a spoonful of jam in the center of half the rounds. Cover with another round and pinch the edges to seal. Let them rise for another 30 minutes.
5. Fry: Heat oil to 170–180°C (340–355°F). Fry the doughnuts a few at a time until golden brown on each side (2–3 minutes per side). Drain on paper towels.
6. Finish: Dust with powdered sugar or glaze once cooled. Optionally, inject more filling with a piping bag.
