🥔 Hashbrown Breakfast Casserole (Make-Ahead & Freezer-Friendly)

A super easy and customizable breakfast casserole that’s perfect for busy mornings, meal prep, or holiday brunch! 🧀🍳


🛒 Ingredients:

  • 30 oz shredded hash brown potatoes, thawed

  • 1 lb ground pork sausage (Jimmy Dean’s recommended)

  • 1 medium onion, finely diced

  • 1 red bell pepper, diced

  • ½ cup butter, melted

  • 10 eggs

  • 1 cup milk

  • ½ tsp dried marjoram

  • ½ tsp dried thyme

  • ½ tsp seasoned salt

  • ½ tsp ground black pepper

  • 3 cups shredded sharp cheddar cheese

  • 3 green onions, thinly sliced (divided)


👩‍🍳 Instructions:

Prep the Dish:
Preheat oven to 350°F (175°C). Spray a 9×13-inch casserole dish with nonstick spray.

Layer Hash Browns:
Spread thawed hash browns evenly in the dish.

Cook the Sausage Mixture:
Brown the sausage in a skillet over medium heat.
When halfway done, add onion and red bell pepper.
Cook until sausage is browned and onions are soft. Remove from heat.

Add Butter & Cheese:
Pour melted butter over hash browns and toss to coat.
Sprinkle half the shredded cheddar over the hash browns.

Assemble the Casserole:
