Ingredients:
- 400–500 g palmier cookies (or any puff pastry cookies)
- 1 liter milk
- 3 eggs
- 5 tablespoons sugar
- 3 tablespoons cornstarch
- 3 tablespoons all-purpose flour
- 1 teaspoon vanilla extract or vanilla sugar
- 200 g unsalted butter (room temperature)
Instructions:
🥄 Step 1: Make the Custard Cream
- In a saucepan, whisk together:
- Eggs
- Sugar
- Cornstarch
- Flour
Slowly add the milk while whisking to avoid lumps.
- Place the saucepan over medium heat and cook while stirring constantly until the mixture thickens into a smooth custard.
- Remove from heat and add vanilla. Let it cool to room temperature, covering the surface with plastic wrap to prevent a skin from forming.
- Once cooled, beat the soft butter in a bowl until fluffy, then gradually add the custard, beating until smooth and creamy.
