📝 Ingredients:

For the rice:

  • 2 cups arborio rice 🍚

  • 4 cups chicken or vegetable broth 🥣

  • 1/2 teaspoon salt 🧂

  • 1/4 teaspoon black pepper

  • 1/2 cup grated Parmesan cheese 🧀

  • 2 tablespoons butter 🧈

For the filling:

  • 100g mozzarella cheese, cubed 🧀
    (optional: add peas or cooked minced meat for variety)

For the coating:

  • 2 eggs, beaten 🥚

  • 1 cup all-purpose flour 🌾

  • 1 1/2 cups breadcrumbs

  • Oil for deep frying 🛢️

For serving:

  • Warm marinara or tomato sauce 🍅

  • Fresh chopped parsley (optional) 🌿


👩‍🍳 Instructions:

  1. Cook the rice:
    In a pot, cook arborio rice with broth, salt, and pepper until tender and all liquid is absorbed (about 20 minutes). Stir in Parmesan and butter. Let it cool completely.

  2. Form the balls:
    Take a scoop of cooled rice, flatten slightly, and place a cube of mozzarella in the center. Shape into a ball, sealing the cheese inside. Repeat with remaining rice.
