Cook the rice:
In a pot, cook arborio rice with broth, salt, and pepper until tender and all liquid is absorbed (about 20 minutes). Stir in Parmesan and butter. Let it cool completely. -
Form the balls:
Take a scoop of cooled rice, flatten slightly, and place a cube of mozzarella in the center. Shape into a ball, sealing the cheese inside. Repeat with remaining rice. -
