Spiral Raisin Brioche Cake – Buttery Layers, Sweet Raisins & a Stunning Swirl! 🍇🍞

A soft and buttery sweet bread rolled with raisins and beautifully shaped into a stunning spiral loaf. Lightly glazed and topped with candied cherries – it’s as delicious as it looks!


📝 Ingredients:

For the dough:

  • 500 g all-purpose flour

  • 2 tsp active dry yeast

  • 100 ml warm milk

  • 100 g sugar

  • 2 eggs

  • 100 g butter (softened)

  • 1 tsp vanilla extract

  • 1/2 tsp salt

For the filling:

  • 100 g raisins (soaked in warm water or rum for 15 min)

  • Optional: 50 g candied cherries

To glaze:

  • 1 egg yolk + 1 tbsp milk (for brushing)

  • 2 tbsp apricot jam or honey (for shine, optional)


👩‍🍳 Instructions:

1. Prepare the Dough:

  • In a small bowl, dissolve the yeast with warm milk and 1 tsp sugar. Let sit for 5–10 minutes until frothy.

  • In a large bowl, mix flour, sugar, and salt. Add in eggs, yeast mixture, vanilla, and softened butter.

  • Knead the dough for 10 minutes until smooth and elastic.

  • Cover and let rise in a warm place for 1.5–2 hours or until doubled in size.
