300g (10 oz) orecchiette pasta

2 tbsp olive oil 🫒

1 small onion, finely chopped

250g (9 oz) Italian sausage (casings removed, cut into chunks)

100ml (1/2 cup) heavy cream

50g (1/2 cup) grated Parmesan cheese

A handful of fresh spinach or arugula 🥬

Cook the Pasta:
Bring a pot of salted water to boil. Cook the orecchiette until al dente, then drain and reserve 1/2 cup of pasta water. -
