🥒 Zucchini and Cheese Pancakes 🧀

Make the batter:
In a mixing bowl, combine the grated zucchini, cheddar, Parmesan, eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.

  • Fry the pancakes:
    Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture per pancake into the skillet, flattening gently with a spoon.

  • Cook until golden:
    Fry for 3–4 minutes per side, or until each pancake is golden brown and crispy.

  • Serve:
    Transfer to a paper towel–lined plate to drain any excess oil. Serve warm with a dollop of sour cream or Greek yogurt, or enjoy them as-is!
